Why do we call the Pope Papa but the priests Pater? What is the differnece between these two words?

Helig Maria, ber för oss.
Papa is Italian for Pope; the accent is on the first syllable [pápa].  The Italian for dad [child word] has an accent on the final syllable [papá].  Late Latin pappa or papa are words for dad.
Pater is Latin for father.
