Why do we read from the New Testament and not the Old Testament as the first bible reading on Sundays during Eastertide?  Thanks.

Answer
You must be referring to the practice of the Protestantized New Order service, which is not a valid and true Mass.  The true and valid precedential Mass of the Roman Catholic Church, that is, the Traditional Latin Mass, has an Epistle and Gospel, the Epistle almost always coming from one of the Epistles of St. Paul or one of the other Apostles.
