Question
What is God? I know the Bible says God is light, but why light? Did God give Himself that appearance? Or does God have no choice whatsoever what He looks like? Does He have a choice whether or not He exists?

Answer
To say God is light only means that His ways are those of light, that is to be able to see and see clearly.
In darkness, one stumbles about, tripping over objects unseen or falling into holes or other hazards.  Evil likes the darkness since it can hide in there.  A thief or burgler does not want to be seen, so he works in the dark.  But God is open and obvious, those who follow the way of God have nothing to hide, and so stand fast in the light.
Apart from the appearence of Jesus Christ, it is meaningless to speak of the appearence of God as though he had one face or another.  And the appearence of Jesus Christ was God's own choice for the face reflecting His divine love for us as He taught His ways, founded His church, and gave His life for our sins.
You ask if God could choose not to exist.  Certainly God can choose whatever He pleases, but obviously the finality of such a choice as that would render any further "choices" on His part moot.  That's is sort of like "Can God make something so heavy that He cannot lift it?"  To which the answer is "Yes He could, but He would not, and therefore will not."
