Where does the no meat on friday come from? besides vatican II, what is it based on, how does the meat signify penence?

dear Liz--
  The practice (not doctrine) of no meat was observed long before Vatican II.
  I have heard a few explaintion, that "make sense" and other are just dumb statements of bigotry.
  I tend to favor:
    Sense we are giving up something lawful, its to challenge us to give up the unlawful things in our life. Also remind us this world of flesh is passing but our soul lives on.
