This is covered in the information on the Immigration Department website at http://www.immigration.gov.ky/portal/page?_pageid=1608,2524581&_dad=portal&_sche... (and related pages on the website).

There is a good website about moving/settling in Cayman at http://www.newresident.ky

Of the three islands, my personal choice would be Cayman Brac.  It has better communications links with occasional direct flight to Miami, but principally as it is higher above sea level, doesn't sugger as mush as Grand Cayman and Little Cayman from flooding - expecially flooding caused by storm surges after hurricanes.

Good luck!
