Hi,
How long can I stay in the Cayman Islands without a work visa?

Entry requirements depend on nationality - see http://www.immigration.gov.ky/portal/page?_pageid=1608,2524545&_dad=portal&_sche... for details of which nationalities require visas.
Generally as a tourist you can stay up to six months. However, I believe that usually immigration at the airport allow you three months and then you have to go to their ofices to get an extension. You need to prove to the authorities that you can support yourself (or are staying with someone who can support you), without you needing to work.
