Question
if i move to cayman on a work permit can a 21 year old son go on my earnings without a permit.

Under thge immigration laws, dependents only include spouses and children under 18. Even if he was allowed as a dependent, he wouldn't be allowed to work. His best bet would be to try to get a permit in his own name as well, or try for a student visa to study at one of the colleges - you'd have to pay the fees. Your prospective employer should be able to advise.
