Really can't answer for other places in the Caribbean - just the Cayman Islands. It may be worth checking out jobinthesun.com: http://hop.clickbank.net/?gotocayman.jobinthesu

A Caymanian has to be the majority shareholder in any business.
There is some information on this on teh Government website at http://www.gov.ky/portal/page?_pageid=1142,1592736&_dad=portal&_schema=PORTAL

Also check out:

If you do proceed, I think that it would also be worth contacting a local law firm to help with establishing the business and guiding you through all the local legislation.

It is also probably worth contacting the department of Tourism office in Canada for advice:
Department of Tourism

M4P 1K5
Toll Free: 800 263 5805
Tel: 416 485 1550
Fax: 416 485 7578

Hope this helps!
