Hi, I have an LG Eve unlocked SIM phone which I had used in other countries with different carriers without any trouble.

Yesterday when I came to the US, I bought a GoPhone Pay as you go, thinking I could take out the SIM Card, put it in my LG Eve and it would work...

Turns out my LG Eve never found the network (AT& T), sometimes it said it didnt have a SIM Card, and sometimes that there was no service... I'd really love to use this phone because I need my GPS and Google Maps and all sorts of apps that the GoPhone doesn't have.

Is there some sort of trick to get things going?

The phone may not be recognizing the SIM because it is not set to view the US networks. Since you used it outside the US, it may only be searching for the non-US bands. Check to see that it is set to look for 850 and 1900 and not just 900 and 1800 and that may solve the problem.
