What is the best way to roll out clay to a uniform
thickness before cutting into squares?

Erick,

Thee best way is to use a slab roller, but if you don't have one or access to one the old fashioned way works well too. Use a couple of wood strips the same length and thickness, about 1/4" or thicker if desired. Use a rolling pin or dowel to roll the clay between the two strips for even thickness. Hope this helps.
