Question
suppose i wanted to collect and find the mass of gas produced in a chemical reaction.  how could i do this?

Here is the best method.  With the volume of water displaced, use PV=nRT to get moles and then grams.  You know P,V,R,T from the experiment.

An alternative is this. Use this apparatus where you use a vessel that has volume markings instead of the test tube.  The change from before and after will give you the volume and using PV=nRT, you can find n, the number of moles and thus the mass.  This will be an approximation.  To be more accurate, you would need special equipment and a vacuum line.
