Question
my 2000 chevy tahoe died while we where driving oil pressure had been bouncing from zero to forty for a few days before that. when the tahoe died the pressure dropped to zero and the truck stopped. it will start for a second and pressure drops and truck dies.

Answer
Check the oil pressure with a gauge by taking the oil pressure switch out and putting the gauge in it's place. If the oil pressure reads good, change the oil pressure switch. On many Chevrolet vehicles, the oil pressure circuit is connected to the fuel pump circuit and if the oil pressure drops to zero, the engine shuts down to prevent damage. Try a new switch and see if that fixes it.
