Dear Mr. Wu,

I LOVE Egg Fu Yung. I prefer it with onions. I am living in France and have not been able to find a restaurant that prepares the Egg Fu Yung the way I have eaten it in Boston. I have searched the internet, and found that some cooks use "fish sauce." I am confused. Is this anchovy sauce, oyster sauce, or some other type of sauce, please? Additionally, I am searching for a gravy sauce that contains ginger. I used to be able to taste the giner in the sauce served at the restaurantin my former neighborhood in the USA. Also, if you have a recipe for this dish, please share it with me.

Happy New Year. lets see if I can help you answer your questions
the fish sauce that you mention is mainly peoples from Vietnam
use them be honest with you when I smell that fish sauce I feel
like throwing up I don't even use that in my cooking. one of the reason you didn't taste the Ginger in your Egg-Fu-Young sauce maybe
that day the chef runs out and didn't put it in the sauce that he's making, as far as recipe for the Fu-Young  I DON'T have one because
I don't cook that dish in my restaurant! sorry to disapoint you
