Hi Chef Wu! I hope you are well! I intend to cook peking duck for some friends. The problem I have is I have not yet prepared the duck which I keep in my garden. Can you suggest the best way to execute a medium sized duck?

if that's your question then I'AM SORRY I don't do that all the duck that I use in my own restaurant
they all come from my local market. sorry that I caan't be of help to you.
