Question QUESTION: Dear Chef Wu
Your last answer was so good I thought I should ask you another ! .
Please Please Please tell me the secret of flavouring wok oil ! I know I should use peanut or ground nut , I usually stir-fry whole garlic cloves , a piece of ginger and a dry chilli in it to flavour it , but its not quite right . What am I doing wrong ?????
Please help me !

Answer Oli! I'am curious why do you want to flavering your cooking oil? I have cooking about 26 years of my life and I don't even do that at my establishment but I also know it's everyones preference
ok try this, first dry cook your ginger and Five Star( five star is this plant look like a five star)
ask your local asian market they will have it. but Oli turn your fire to small because if it's too fast you will smell the burn ginger and five star. but make sure you turn them with flipping action or use
a untencil to turn it. I want you to slow cook these 2 bad boys until you smell the flavor then add your oil to your Wok and cook little longer until you reach the flavoring that you are looking for
good luck to you. but becareful don't let your cooking oil gets too hot we all know what that will produce right Oli? take care my friend!
