Chinese Cuisine/Steeping chicken

Hi Louis,

I remember learning a trick about how to cook chicken by steeping.  My friend in Taiwan taught me to put the chicken in a pot, bring it to a boil.  As soon as it boils, turn the pot off and let the chicken sit for one hour.  It always turned out beautiful and tender.

My question to you is how safe is this?  I would imagine that it would not be safe (salmonella.)  What do you think?

did you know I'am from Taiwan too? lol
because of everyones healthy concious these days, I wouldnt keep using his methods, I know it makes your chicken taste tender
but who wants to get sick?? to me its not safe to "NOT" cook Chicken
all the way throught. thats one thing I make sure of when I cook
my food for my customers, hope this help have a great weekend!
