Question
Hi Louis,

I love the flavor of commercial, canned Chicken Chow mein sauce. I would like to duplicate this sauce as close as possible. How would you begin?

Thank you, Regards, Ken.

Answer
hello Ken!
Chef Wu here ! sorry I have been to Vegas just got back last night sorry for the delay answering your question. I never bought commerical canned chow mein so I have no idea what they test like but what I Use in my restaurant is this. chicken Broth, salt,MSG,white pepper, corn starch and seaseme oil. you first chop some garlic. heat your pot then drip some oil in the pan throw your chop garlic in then pour your chicken broth then add salt, white pepper MSG then pour some corn starch in a bowel add little water you want to thicken your sauce then make sure your pot is hot
otherwise you going to have a goey sauce stire fast while pour in your corn starch.
then you can mix all your meat and veggies or whatever you are using to make chow mein and stir
it up then your Meal is Serve!!!
hope this helps Ken!
