Chinese Cuisine/spare ribs

I grew up in Brooklyn, NY in the 50s and my family and I always went out for Chinese food.  The restuarants were all Cantonese at that time and my favorite was spare ribs.We are now living in Louisiana and all of the restaurants serve spare ribs in a red sauce.  That is not the way we had them in NY.  They did not have a sauce and were wonderful.  Do you now how I would prepare them.  Thank you.

HI! Chef Louis here. I'am sorry to inform you but it's not that easy to make spare ribs in your home like we do them
in our own chinese restaurant mainly is because all those ingredents will cost you more then you buy them in your local chinese restaurant. I know you have mention that
you use to live in Big Apple and now A cajuin lady I know
there's lots diffrence in these two state. and you can't get those New Yorker's rib I only can say I'am sorry.
