Answer
Hello Phil,

That film was "The Music Of Chance from 1993. It starred James Spader, Mandy Patinkin, M. Emmet Walsh, Joel Grey, Charles Durning and Chris Penn.

STORYLINE: A former fireman and drifter (Mandy Patinkin) meets a professional poker player (James Spader) that convinces him to back a high-stakes card game with two eccentric millionaires. When they lose, they wind up building a seemingly meaningless stone wall across a meadow on the millionaires' estate to work off their debts.
