What would be the best way to keep a coin and banknote collection?

Hello Carlos,                    

You should use museum quality storage mediums for all your collectables. I cannot tell you what the the best way may be but this is a good safe way.
All good hobby shops should have the proper acid and vinyl free holders for coins and currency.

Some contend that not all coins change color or tone, silver, copper, gold or other. If they are sealed in an airtight environment the surfaces of a coin will deplete sulfur and other chemicals present in the atmosphere around it and stop age toning after that.

New on the market is something called Intercept Shield coin holders are designed to intercept and neutralize sulfur and other contaminants and thus prevent toning. But they are expensive. The theory is that contaminants will attack the material in the shield and leave your coins alone

In general keep your coins and notes in a cool dry place using acid-free medium like Photograph storage boxes and albums. I place these in an inert plastics container like Tupperware. I also put a desiccant like silica-gel in the Tupperware and in the storage area.
