I have a 2003 penny and on the back it has the word imprinted copy on it. Was this done at the mint?

Hi Tom,
It's a bit unusual to find a copy of a modern penny. This most certainly was not done at the mint. A coin stamped "copy" denotes a novelty replica, but you may also have a regular penny that someone stamped for whatever reason. It's more common to find pennies stamped with images of important figures, often JFK or Lincoln, or various items such as stars, hearts or zodiac symbols.
