Hi Eileen,
I have what I believe is an oak teacher's chair that is in excellent condition with the original finish. However, I do not like the glossy varnish (?) on it and would like to take that off and just leave the stain underneath. Can this be done without totally refinishing the chair?

Nice to hear from you.
What you are suggesting is not possible.
But its certainly possible to change the sheen of the glossy varnish (?).
Clean the chair down well using a fine steel wool pad dipped in mineral spirits (varsol in Canada). Dry as you go with clean rags.
Then apply a coat of low sheen finish.
I would not be concerned with wether its varnish or shellac but simply wipe on a coat of low sheen tung oil.
Your chair will look lovely.
I dislike the glossy finish also.
