What is the difference in value of a cane chair worked by hand through holes in the side and a cane chair that simply has a caned piece set into the wood?

There is no difference in the value. Hand cane was the only cane available up to the early 1900s, then prewoven [also called sheet cane, cane webbing, pressed cane] came into use and slowly replaced hand cane in all but the most expensive chairs. Hand cane and prewoven cane are NOT interchangeable despite what many people say it's an old wives tale.
To answer your question, the value is in the chair itself and the condition of the cane not the type of cane. Many hand cane chairs were "massed produced" in the late 1800s and don't carry much of a value.
One more thing since we are on this subject. Having a hand cane chair routed to except the prewoven cane because it costs less, takes away from the value of the chair especially in a high end chair or any piece of caned furniture.
