Question
I have a large German griffin carved from oak wood. What can I use to keep it from eventually splitting/cracking and to polish it?

My concern is using a product that contains chemicals that will be harmful to the wood long term. At the same time, I don't want a high polish or a high sheen glossy look to it.

Nice to hear from you.
It will be the climate in your house which will determine if your carving will split or crack.
And we know that is very hard to control...almost impossible.
Personally I would use a bit of paste wax on this and nothing else.
The wax contains none of the chemicals you are rightfully concerned about.
Also keep the carving out of direct sun and away from heat sources..even a TV can be a heat source.
