Question
If a team lines up in a punt formation ad punts the ball away, but it bounces off of a member of the opposing team's helmet and goes through the uprights, does it count as a field goal?

No it does not because first the ball was punted, not place kicked or drop kicked; second once it touches the receiving team player it is grounded.  [What is interesting about your situation is the touching by the receiving team, all the approved ruling or case book examples that permit a FG to be scored where it is touched has the touching at the line of scrimmage or leaping in the air off the ground.]
