Question
I am putting together a bid for a fast food restaurant (Sonic Drive In) and I am
looking for some information on the costs and the experience in general.  I just
want to see if we are in the right ballpark with our numbers and allowances for
unforeseen obstacles.  Where can I find this type of information?

There are no set rules on estimating.  However, I use the listing of the AIA (Architects) specifications (16 classifications with sub-classes) to be sure I have not missed anything.  
Overlooking one item can be costly.  Sometimes it's the simple things that are in general notes such as "site protection", "site signage", "shop drawings required", etc.
I also read the specifications very carefully.  There can be pitfalls that are not obvious, like the requirement of a specific product that may be difficult to find in your area.  For example, I recently completed a restaurant project that specified a store-front product that was three times the cost of a product I could get locally.  This chain specified that particular store-front because the manufacturer is very large and the have a dealer in most areas = but not all!  Fortunately the owner accepted the product I submitted as a substitute.  Check with the Architect or Owner first.  Usually specifications read - "---or equal" for a specific product.  You still must get approval of the equal product.  
Next, of course, is the actual contract to build the project.  These documents are written by lawyers in favor of the Owner.  Not all contracts are equal!  The retainage amount can vary but more importantly, - when is the retainage paid?
The courts are overflowing with litigation caused by a Contractor who didn't dot his "i's" or cross his "t's".  Be aware of your lien law rights in your state and be sure and file the proper documents in the prescribed time - Notice to Owner, Notice of Commencement, etc.

Six years later I moved to Florida to buy & develop land and build. I became a State of Florida Certified General Contractor and operated my business for 45 years. I built all types of residential and commercial buildings including warehouses, shopping centers, high rise apartments and office buildings and developed sites for other contractors. I retired and became a consultant to the construction industry. I maintain my license and continuing education requirements, operate a small construction company and write a weekly newspaper column for the Palm Beach Post (a Cox publication) with the byline "Ask The Contractor". I am the "technical editor" for a publisher of books that relate to home maintenance.

I built a home in Palm Beach for a member of the Pulitzer Family. I was responsible for the completion of a twin hi-rise condominium project for G.E. Credit.
