Data modelling is not something I do regularly, but here is a website that gives the symbols closest to those I use know: http://www.smartdraw.com/tutorials/software-dfd/dfd.htm There is also an entry on Wikipedia.

Customer service is too broad a subject. If this is an assignment, I suggest you reduce the scope to, say, handling customer complaints or another discrete subset, otherwise your map will be very large.
