Question
I have a wild boar tenderloin to cook tonight.  Is there any special preperation needed for this piece of meat?  Or can I just use my usual pork tenderloin recipe?

Mary:

It depends on the meat.  If it has boar taint you might consider soaking it overnight in buttermilk to try and draw any potential taint flavor out of it.  Then just cook as you would pork, but be sure that you reach at least 150-160F to kill any trichinosis parasites.  Wild boar and bear carry this parasite and need to be more well cooked than commercial pork.
