Keith,
I have about 10 pounds of black bear sausage that was given to me.  Unfortunately, I have no idea what to do with it.  Could you please recommend a recipe or two, or even a good website to get get more information?

Remember to treat the sausage like pork sausage, you have to cook it well to kill any trichinosis that might be in the meat.

If the meat appears to be a bit dry, try mixing in a proportion of inexpensive pork sausage for added fat and cohesion.

Do you have a good source for sausage casings?  Try you meat market or supermarket meat department.  They might sell you some.  They get them in bulk.
