Cooking Meat/Deer ham

Question
Can you cure a deer ham (6-9lb) like you cure a pork ham?  Can you give a recipe?

Answer
Rob:
Well, it isn't my expertise, but what I know is:

1. Yes, you can cure any kind of meat like a pork meat (ham).
2. It takes time and knowledge to do a safe/delicious product.
3. The curing process is delicate and you have to keep some essential factors under control. i.e Nitrites/Nitrates level, if you overdose they could be harmful. Curing time, rubbing instructions, temperature and  relative humidity among others.
3. In order to work safe (focusing on critical control points) I recommend you to read carefully the following web pages:

http://www.nancys-kitchen.com/ham-recipes.htm

I'm sorry but I can't help you more,
Enrique
