Will brining remove excess blood from game meat?  Thanks.

Answer
Yes.

A membrane reaction takes place and it draws brine in and blood and liquid out of the meat to dilute the brine.  Nature hates inequality and will try to equilibrate the two solutions: the brine and the inter-cellular fluid of the meat.
