Question
is there any way to salvage a whole stick of sausage my boyfriend inadvertently allowed to dry out in the frig.?
(Such as reconstituting it?)

Well you could try soaking it in something. The fat is still okay if it doesn't smell bad, you can try to rehydrate it with the moisture that was lost.  Try soaking it in beer.  I'm not kidding.  Don't use a real hoppy beer, try a stout or amber ale.  These won't impart any taste that will be at odds with the flavor of the sausage.  Put the beer in a container and submerge the sausage.  A ziplock bag will probably work.  Keep the bag standing upright so the sausage is completely covered and put it in the refrigerator for a few days.
