Question
I have beef tenderloin filets, and I am curious if marinating them over night will inhibit proper searing because of the excess moisture on the steak? Should I marinate and then pat dry before searing?

Nancy:
Yes, is better if you dry tenderloin surface before searing.
I recommend you to use a paper towel to do it.
The pan temperature has to be high enough to brown beef surface in few minutes (2 or 3 minutes) after that use lower temperature to cook it.
