Hi,

I'm looking for a recipe for leftover beef tenderloin. I have about one & a half pounds left from a big dinner. Would like to use it for a stew possibly.

A recipe could be:

1 1/2 pounds of Beef Tenderloin
1 olive oil big spoon.
1/2 pound of canned black beans
2 tablespoons of soy sauce.
1 half of small spoon of green Mexican chili sauce or Tabasco sauce (less or more according to your choice).

Procedure:

Cut  beef into small squares ( approximately 0.5 inch cubes)
Sautee  beef cubes with olive oil until slightly brown color obtained.
Add canned beans, soy sauce and hot sauce.
Cook for 5 minutes.
Serve

This recipe could be served with a minced tomatoes and red onions, and coriander salad.
