Question
suitable complex meat dishes to be served with a) tomato & shallot dressing, b) rosemary & tyme dressing, c) cumberland dressing?

Sorry for the delay in getting back to you on this.  Had a malfunction.

At first glance, I can't think of any meat on which I would use a Tomato & Shallot dressing, except perhaps a meatloaf or a Swiss steak sort of arrangement.   

The Rosemary and Thyme dressing sounds as if it would go well with Lamb, such as Lamb chops, Rack of Lamb, or leg of Lamb, perhaps even Chicken Breast, but it is probably too strong for other meats.  

Cumberland Dressing I think would be suitable for chicken, but the use of lemon and/or orange I don't think would make it appropriate for other meats.

Thinking about this a bit more, I think the Cumberland dressing would be quite appropriate with a grilled Veal Chop or, even better, with thinly sliced pork loin.
