Cooking Meat - Wild boar steaks

Expert: Keith Patton - 4/30/2009

Question
Is it possible to pan fry these steaks or is it better
to cook them slowly in a casserole?

Answer
Lilian:

You would probably have best luck braising them, or as you suggest, slow cooking them.  First sear them in a hot skillet then either move them to a cassarole dish or add liquid to the skillet and simmer them till tender.  You could remove them from the pan, deglaze it with a bit of white wine, then add pineapple juice and simmer till tender.  Add more liquid as needed.  Before serving you can add some fruit cocktail and season to taste with salt and pepper for kind of a Luau ham steak dish.
