Question
what is the best way to cook duiker (small deer) meat?

I should think that any venison recipe would work just fine, but since the Duiker is a small antelope, included recipes for that too.

That should keep you busy.

Just as with most game meat, the challenge is to cook the meat without drying it out by overcooking.  Use an instant read meat thermometer and cook according to temp, not time.

Another suggestion for the tougher cuts is make a curry.  Yellow, green or red, the slow long cooking of curry will make the meat tender and the spiceiness will help cover any off flavors if the meat was not handled well in the field.
