Cooking Meat - Beef roast

Expert: Fred Wolfe - 4/28/2002

Question
I want to cook a roast in the slowcooker to be sliced crossgrain for sandwiches. I need to know--- Best cut of beef  (not the most expensive)
Best Marinade and how long to marinate.
       Best spices for taste.
    Thank you----Nora

Answer
Hello!
Cooking your meat in a slowcooker is going to make your roast very tender. If you are going to use this method, I would not suggest trying to slice the meat into neat slices. It is going to be so tender that it will likely fall apart. Just pull the meat apart, and it will make a delicious pulled beef sandwich. I would suggest using a bottom round roast, or beef brisket for this. Marinate the meat overnight before cooking. My favorite marinade is called "Dale's Seasoning" and it is pretty common. Use a good crusty bread and some sharp cheddar cheese for a delicious sandwich!

Good Luck,
Fred Wolfe
