Question
I'm helping my daughter's friend (from Japan) plan food for 75-80 people for an outdoor wedding reception.  She has decided on real Texas BBQ. The wedding is at 5pm so reception will start around 6pm.  Variety of guests young/old, men/women.  She has one friend bringing potato salad, one bringing baked beans/garlic bread, another bringing cole slaw.  She will also have pickles & onions.  She plans to have a friend cook brisket and then buy from a local BBQ place bbq chicken and sausage.  My question is how much brisket, chicken & sausage and BBQ sauce?  The variety is due to some in the group will only eat chicken and others will not eat chicken.  I have tentatively planned 25 lbs brisket, 10 lbs sausage (but was thinking maybe 15 - there are 5 lbs per aluminum pan) and 8 chickens which should be 3 pans & approx 64 pieces.  Thanks, I have loved reading the past few months questions and responses.

I think you have about the right amount--you should have plenty of food and maybe some leftovers you can send with the bride and groom to eat at the hotel when they get hungry later.
