Question
I have several catering jobs coming up off premises. How do you cook fettucini and travel it 10 miles, 1 hour before serving to keep it fresh and not become sticky??
It's pretty difficult to do, there's an old saying that sauce will wait for the pasta but pasta won't wait for the sauce. Since you don't have this option, I can only suggest that you cook the pasta well and then add some butter or olive oil to it and toss it around. If it is possible reheating in boiling water would be your best option.
