we are having shaved ham,turkey,roast beef.how much should we get?

Calculate 5 oz of meat for every sandwich you expect to serve. I find that turkey is the most popular meat at any party these days so I would buy the most of that, followed by ham with roast beef being less popular these days.  For cheese, I'd have American and Swiss.
People who eat roast beef and ham will also eat turkey, but many people who eat turkey won't eat ham or roast beef so I'd have half the meat as turkey and split the other half between the roast beef and ham.  For 120 people, figure on about 150 sandwiches since some people will eat more than one--but not everyone will eat two. I'd use small rolls--less waste that way since they can go back and make another one as opposed to not finishing a bigger sandwich. Something about the size of a small hamburger bun should work great and you can usually get those in both white and wheat.
For the turkey you will need about 24 pounds of meat and about 10 each of the ham and roast beef.  Good Luck!
