Cooking for Parties/high school grad open house

Question
Hi,
I am planning an open house for my daughter's graduation.  I have not gotten rsvp's from alot of people so if I go with who was invited and did not say that were not coming, I have about 95 people to serve.  I won't mind some left overs, but I don't want tons.
I am serving sloppy joes (how many buns and how much hamburger?)
a pasta salad with pepperoni, mozzarella, peppers
a romaine salad with cukes, tomatoes, mozz. cheese (I am guessing alot of kids won't eat so manybe just plan for 50 servings of this?)
baked beans
carrots, celery, dip, black olives and pickles
assorted bars and cookies
lemonade or punch and coffee.
How much do I make of these items?  Any help would be greatly appreciated!
Thank YOu
Joni

Answer
You need to get on the phone and find out who is coming so you can have a head count.  It is extraordinarily rude for people not to RSVP and it's impossible to plan how much you will need without a head count.  Kids eat more salad these days than you might think they do, so it's hard to say you will only need 50 servings for 95 people because salads are very popular.
GET A HEAD COUNT--that's your first priority.
For each person you will need
6 oz of sloppy joe meat and 1 bun
4 oz of pasta salad
3 oz of baked beans
3 oz of salad
3 oz of veggie tray
3 cookies
16 oz of beverage and more if it's a hot day.
Good Luck--and don't hesitate to get back to me if you need more help!
