Cooking for Parties/having an italian buffet for 100 people

Question
Hi I'm making an italian buffet for 100 people my menu includes a large
antipasti table with about 8 different choices 3 different pasta choices 3
different panini choices and 3 entrees one being lasagna one chicken
parmigiana and one a fish , I was wondering how many servings per item I
should make . I can't change anything on my menu since I had to  have it
approved.

You are going to have to cut down your menu considerably, as you have FAR too many choices here or you will need to send out cards similar to the ones you see at weddings with a menu selection i.e. chicken or beef.  If you don't do this, you will have no idea of how many servings you will need to make of each and you will have some very unhappy guests or you will have a tremendous amount of waste unless you give each guest a tiny portion of each entree.
I'm getting the impression that this is a homework question and you are a culinary student, as no professional chef would EVER plan a catering menu of this size for only 100 people.
