Question
I am helping to cater my sisters wedding. I am so confused about the amount of food to prepare for 100 people.  It is a luau theme, and buffet style. We planned to have Boneless Ribs, Pineapple Chicken, Beef on a stick, Mac and Cheese, Rice, Green Salad, Potato Salad and Hawaiian Sweet Potatoe-coconut side dish   Any suggestions?  

Answer
For each person you will need 6 oz of meat, 5 appetizer bites, 4 oz of each side dish, 2 oz of lettuce-based salad and 1 dessert serving.
this means you will need about 38 pounds of ribs and chicken and 25 pounds of rice, Mac/Cheese, Potato Salad and the coconut potato side dish *which I would rethink or get rid of the potato salad and or mac/cheese* and 125 slices of cake.
