Question
I need to know how much hamburger I will need to feed 40 people taco salad. There will be approx. 12 kids included in that number.
Figure 6 oz of cooked meat per salad. This will require about 15-18 pounds of raw meat depending on how much it shrinks during the cooking. Here's a recipe that is very good for taco meat:
15 pounds of lean ground beef, cooked and drained
10 packets of Chilli seasoning (like generic Chill-O)
1 gallon of mild or medium salsa
3 TBS ground cumin
3 TBS Accent
Add the Chilli seasoning and Cumin and Accent to the cooked beef, mix well. Add the Salsa and simmer for 5-10 minutes. Using a 6 ounce scoop for portion control, add a scoop of meat to each bed of salad greens and top immediately with shredded cheddar/colby/jack and some diced tomatoes and a little chopped cilantro if desired.
