Cooking for Parties/Graduation party

Question
I am planning my daughters graduation party for about 75 people. The menu so far includes 100 pc chicken, 7lbs buffalo chicken dip with tortilla chips, burgers, hot dogs, pasta salad, watermelon, water and canned soda and a full sheet cake. Not really sure how much of each item I would need; also the party is open house style- not sure if that changes anything.

Answer
You need at least 2 pieces of chicken per person, 4 if you are serving wings OR 1 burger/2 dogs per person. 4oz of side dishes up to 3 dishes and 1 dessert serving per person so you will need a bigger cake. 16-32 oz of non-alcoholic beverage per person and 1 watermelon for each 20 guests.
