Hi there,

I am throwing a party and I was wondering if you could help....I have this recipe of fish fingers and it asks me to add Parmesan cheese..Now...here is what really bothers me....is it alright if I used cheddar or mozarealla cheese instead? I mean...to me they all sound the same....
Hey and guess what....I usually make pizza with hungarian cheese called Kashkaval....and it turns out amazing...so is it okay if I change the cheese with fish fingers too??

I would not change it in this recipe.  Parmesan is a hard cheese and when used as part of a coating (which is what this sounds like) will lend it's special properties to the dish, whereas a soft or semi-soft cheses like mozzarella or cheddar will give you a soggy coating.
