I am having a 60th wedding anniversary dinner for approximately 250 people. I would like ideas of a reasonable costing menu. They love Barbeque Brisket so I am leaning toward a menu around this.

BBQ brisket is a great choice--I served it at my football kickoff party on 9/7 and everyone loved it!  You will need about 8oz of cooked brisket per person--and remember that it does shrink!  I cook mine in the oven seasoned with bbq rub and liquid smoke the night before.  I wrap them in foil and bake for 2-3 hours and then when I take them out they are very tender.  This allows me to just scrape the fat (and there's alot of it) right off the top, then I reseal the foil and chill them overnight.  I then coat them in sauce and put them on the grill just long enough to glaze them with sauce and give them that chargrilled flavor.  Slice and serve and accept praise!
Some cheap sides would be potatoes that have been tossed in olive oil, seasoned and open roasted, and veggie like glazed carrots.  I'd finish up with a purchased Cheesecake factory plain cheesecake which are $10 each (12 servings--4 pounds) and at $2.50 a pound for this excellent product, it's very reasonable!  You can top it with sliced strawberries or canned cherry, blueberry, apple or peach pie filling if you wish. Appetizers like chips and dips are economical and good, buy the store brand chips as the are much cheaper.
