Cooking for Parties/Shower for 65 people - salad bar

Question
My sister in law wants a "salad" bar for her baby shower for 65 people.  NO idea how much lettuce to buy or type of toppings and quantity of toppings.  She also wants chicken salad and croissants, pizza squares and fruit kabobs.  She is also having her "special" Chinese salad made (I'm letting her mom worry about that).  It's an 11:30 start time.  We're having cake/sorbet/brownies for dessert.

Answer
Toppings: chopped egg, garbanzo beans, bacon bits, croutons, dried cranberries, sunflower seeds, walnuts.
An assortment of dressings: Ranch, Italian, bleu cheese, French, Thousand Island and Honey Mustard--you can buy them in large bottles.
Figure 3 oz of salad greens per person, 2 oz of dressing per person and 1/2 oz of each topping per person.
You have too many desserts, go with the cake alone or you will have a ton of sweets left over.
Figure 3 oz of chicken salad and one croissant per person.
