Hi Teri,
I am getting married on July 25, 2009 and am going to go with Cold Plates. How many Turkeys will feed 125 people (withthe lbs i.e. 2- 20 lbs Turkeys) and how many Hams would I need to purchase. Also if I were to cook them ahead of time (appx 1 week) and freeze them would this make a huge difference. Thank You so much.

You cannot cook them ahead and freeze them. Your best bet would be to buy cold cut platters from the grocery store deli. I did a wedding like this and it was a smash--we had every kind of cold cut imaginable along with sides--potato salad, pasta salad, caesar salad and 16 different appetizers--it was great! I don't know where you are but Publix makes awesome platters, all decorated with condiments and they have a great bakery. Another tip--check Wal-mart for wedding cakes--I got a gorgeous wedding cake for 125 people for 149 and it was delicious!!
